Salvia officinalis

This plant grows in height up to approximately 2ft. This is another 'essential' for the herb garden. The foliage is grey-green in colour and it produces purple flower 'spikes'.

It prefers sun but not too much moisture in the soil. They can get 'woody' and need to be replaced every few years but you will get amble supplies from just one plant to justify the insignificant cost and its presence.

Pick leaves as required and use in an endless list of dishes. Best known for use with pork, sage and onion stuffing (try sage and onion gravy!) and can be dried for storage but dry slowly for best results.
